Chocolate Chip Cookies

Wet Ingredients:

  • 1 C butter, room temperature
  • ¾ C sugar
  • ¾ C brown sugar
  • 2 eggs
  • ½ teaspoon vanilla

Dry Ingredients:

  • 2 ½ C all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 C chocolate chips

 

Preheat oven to 375°F.

Combine dry ingredients in a small bowl and mix well.  Set aside.  In a mixer bowl fitted with a paddle attachment, beat the butter and sugars until fluffy. Add eggs one at a time, scraping the bowl after each addition. Add vanilla and mix for 30 seconds.

Add dry ingredients to mixer bowl, and mix slowly until all ingredients are just combined. Drop or scoop the cookie dough onto a greased or lined baking sheet, and bake for 9-11 minutes or until golden brown.

This next step is important: when you pull the cookies from the oven, carefully rap each cookie pan on your tabletop or counter.  This forces air out of the crumb of the baked cookies and makes for a dense, chewy cookie.  Click here for a tutorial on this step from Chef Liz.
